Fire Roasted Jalapeño Pitaquiles by Douglas Keane

Ingredients

Stacy's® Fire Roasted Jalapeño Pita Chips
1 bag Stacy’s® Fire Roasted Jalapeño Pita Chips
1/4 cup and 2 Tbsp Olive Oil
1 Garlic Clove, smashed
1/2 Red Onion, sliced
1 cup shredded Pepper Jack Cheese
4 cups Salsa or Pico de Gallo
1/3 cup Cilantro, chopped
1/2 cup Sour Cream
1/2 tsp Salt

Steps

Using flat side of a knife, smash the garlic.

Slice onion and chop cilantro.

In a medium pan heat olive oil on medium heat.

Once olive oil has warmed, add onion and garlic and sauté for two minutes until onion has softened.

Add pita chips to the pan and lightly toast until warm.

Add the salsa or Pico de Gallo to the pan and turn heat up to medium/high, heat for 5 minutes.

Add cheese to pan and allow to melt for about thirty seconds.

Transfer to serving dish and top with a sprinkle of cilantro and enjoy!
