Fresh Parmesan Asparagus Bites by Douglas Keane

Crispy sweet asparagus is the perfect vegetable for a fresh snack. This recipe from Chef Douglas Keane can be prepped in 5 minutes or less!

Ingredients

Stacy's® Simply Naked® Pita Chips
1 bag Stacy’s® Simply Naked® Pita Chips
1 ½ cups Asparagus sliced thin, 5 jumbo asparagus or 8 normal size ones
¼ tsp Salt
1 Tbsp Extra Virgin Olive Oil
½ tsp aged Balsamic Vinegar
½ tsp Dijon mustard
¼ cup freshly grated Parmesan Reggiano cheese

Steps

Trim asparagus stalks and slice very thin.

Mix asparagus with salt and place in a strainer lined with a dishtowel or paper towel, allow to sit for five minutes.

Mix olive oil, mustard and vinegar in a small bowl.

Combine the asparagus with the vinegar mixture.

Assemble a spoonful of mixed asparagus on top of individual pita chips.

Top with freshly grated parmesan cheese and enjoy!
