Ingredients

Stacy's® Toasted Cheddar Pita Chips
1 bag Stacy’s® Toasted Cheddar Pita Chips
1 boneless, skinless Chicken Breast, cut into thin 1 inch pieces or 1 cup pre-shredded chicken breast
Stacy’s® Toasted Cheddar Pita Chips
1/2 cup plain Greek Yogurt
1 handful Baby Arugula
8 Cherry Tomatoes, halved
Crushed Red Pepper flakes
Salt and freshly Ground Pepper

Steps

Season the chicken breast with salt and pepper and grill in a grill pan over high heat until cooked through, 1-2 minutes per side (165°F internal temperature).

Remove from the pan and cut chicken into thin 1 inch pieces.

Top each pita chip with a dollop of Greek Yogurt, a bit of arugula, half a tomato and a cube of grilled chicken.

Sprinkle with red pepper flakes and enjoy!
