Parmesan Garlic Feta Salad by Chef Douglas Keane

Toss together this fresh salad in moments. It's made with delightful ingredients and the flavorful crunch of Stacy's® Pita Chips!

Ingredients

Stacy's® Parmesan Garlic & Herb Pita Chips
1 bag Stacy’s® Parmesan Garlic & Herb Pita Chips
1 ¼ cups Cucumber, chopped
½ cup Red Onion, sliced thin
1 ½ cups Cherry Tomatoes, halved
½ tsp Salt
½ cup Crumbled Feta Cheese
1 ½ Tbsp Red Wine Vinegar
3 ½ Tbsp Extra Virgin Olive Oil

Steps

Wash the cucumber and chop into small cubes.

Slice red onion into thin slices.

Slice cherry tomatoes in half.

In a medium size bowl mix the cucumber, onion, tomatoes, salt, feta, red wine vinegar and 2 Tbsp of the Extra Virgin Olive Oil until combined.

Heat remaining Extra Virgin Olive Oil in saute pan on medium heat.

Once oil is warm, add pita chips and lightly toss to toast and warm, about one minute.

Add chips directly onto the feta salad and toss with a spoon.

Serve immediately and enjoy!
