Watermelon Goat Cheese Toppers by Chef Douglas Keane

Watermelon and goat cheese come together in this delicious and beautiful simple pairing created by Chef Douglas Keane!

Ingredients

Stacy's® Toasted Cheddar Pita Chips
1 bag Stacy’s® Toasted Cheddar Pita Chips
5 oz. Goat cheese
1 Green onion, sliced
¼ tsp Cayenne chili powder
¼ tsp Fresh lime juice
Seedless watermelon, 20 cubes (1 pound)
1 tsp coarse sea salt

Steps

Clean watermelon and dice into 1/2 inch cubes.

Slice scallions thin and place in a bowl with the goat cheese.

Add fresh lime juice and cayenne pepper and to the cheese mix and combine well.

Place a large teaspoon of the goat cheese mix on individual pita chips.

Add one cube of watermelon to the top of each pita chip.

Season each cube of watermelon with a few pieces of coarse sea salt and enjoy!
