Avocado & Egg Bites by Stephanie Le

Avocado, boiled egg and arugula come together perfectly on Stacy's® Parmesan Garlic and Herb Pita Chips. Assemble these little beauties from Award-Winning Blogger Stephanie Le in under 10 minutes.


Stacy's® Parmesan Garlic & Herb Pita Chips
1 bag Stacy’s® Parmesan Garlic Pita Chips
1 large Egg or 1 pre-boiled egg located in the produce section
1/2 ripe Avocado
1 handful baby Arugula
1/2 teaspoon toasted black sesame seeds
Extra Virgin Olive Oil, to drizzle
Crushed Red Peppers, optional
Pinch of Sea Salt & freshly Ground Pepper, to taste


Bring a small pot of water to boil over medium high heat.
When at a simmer, place the egg into the water and set a timer for 8 minutes. While the egg is cooking, prepare an ice bath.
Seed and peel the avocado. Cut into thin slices.
When the egg is cooked, remove from the water and immediately place in the ice bath. Peel and cut into 8 equal pieces.
Lay out pita chips and top each one with a couple of leaves of arugula, some slices avocado, and a piece of egg.
Season with salt and pepper to taste and sprinkle on a couple of sesame seeds and red pepper flakes.
Top off with a drizzle of olive oil and enjoy!
