Kansas City Brisket Bites by Chef Hugh Acheson


Stacy's® Simply Naked® Pita Chips
¼ pound bbq beef brisket, chopped
2 tablespoons pickled jalapeno slices (optional)
1 tablespoon lime juice
1 teaspoon chopped fresh rosemary
½ cup shredded Monterey Jack cheese
salt to taste

Preheat oven to 375F
In a mixing bowl, combine jalapeno slices (if using), lime juice, and rosemary. Season to taste with salt. Set mixture aside.
Arrange the pita chips in one layer in an oval baking dish; top chips with barbecue mix, scatter jalapeno mixture over that and sprinkle with cheese.
Bake in the oven for ten minutes. Alternative microwave instructions: Assemble pita chips as directed. Microwave on High for 3-4 minutes. Oven cooking is recommended.
